Sharpening Global Knives

Global knives are Japanese kitchen knives known for their sharpness, clean design, and lightweight feel. Many professional chefs and home cooks use them for their balance and performance. But like all knives, they become dull with regular use. To keep them working properly, they need regular sharpening.

At Elite Edge, we sharpen Global knives using the correct methods and tools to protect the steel and restore the original edge. Our sharpening process helps keep your knives safe, effective, and long-lasting.

What Makes Global Knives Unique?

Global knives are made from CROMOVA 18 stainless steel. This steel blend includes chromium, molybdenum, and vanadium. It resists rust and holds a fine edge. These knives often have a very thin bevel, with a typical angle of 15 degrees per side, or 30 degrees total. Some single-bevel models are even sharper.

Global knives have hollow stainless steel handles filled with sand for balance. Because the blade and handle are one piece of steel, they have no joints, which makes them more hygienic.

Their sharpness is a key benefit, but also a reason why correct sharpening is so important. If done incorrectly, the thin edge can chip or wear down too fast.

Sharpening Global Knives at Elite Edge

We use whetstones for all Global knives. This gives us better control and protects the fine edge. The sharpening process includes:

  1. Angle Control: We maintain a 15-degree angle using angle guides or by hand.

  2. Water-Cooled Grinding Wheel: The slow-speed, water-cooled grinding wheel shapes and sharpens the edge without burning the steel or causing micro-fractures.

  3. Edge Inspection: After sharpening, we test the edge on paper and check for any uneven wear or micro-chips.

  4. Honing Option: For maintenance, we also offer ceramic rod honing to realign the edge between sharpening sessions.

Our sharpening method ensures the knife keeps its original performance and lasts longer.

Why Not Use Pull-Through Sharpeners?

Global sells its own ceramic-wheel sharpener called the Minosharp. It’s useful for quick home sharpening but can wear down the edge if used too often or incorrectly. Most pull-through sharpeners remove too much steel and apply the wrong angle, which can damage Global knives.

If you value the life of your knives, professional sharpening is the safest and most effective option.

Knife Care Tips for Global Knives

To reduce how often your knives need sharpening, follow these tips:

  • Hand wash your knives with warm, soapy water.

  • Dry them right away.

  • Store them in a knife block, drawer insert, or on a magnetic strip.

  • Avoid cutting hard bones or frozen foods.

  • Use wooden or plastic cutting boards, not glass or stone.

With regular care and professional sharpening, a Global knife can last for many years.
