- Chef knife – A versatile tool that takes care of almost any task including chopping, dicing and slicing. Used for both meat and veg. The wide blade makes it useful for crushing too, garlic for example.
- Carving knife – Used almost exclusively for slicing meats for prep and plating. A specialised knife for the task after which it is named and not recommended to try cut through hard bone and joints etc. Can be used for vegetables too.
- Paring knife – For the more delicate and finer tasks such as peeling and coring, trimming, deveining prawns and any other task that requires smaller and more precise work.
- Utility Knife – This is a very versatile knife and although smaller than a chef or carving knife it can handle most cutting, slicing and chopping tasks with ease. because of its sharper point and narrower blade, it is often used as a replacement for a boning knife (but shouldn’t) when there is no other alternative. Known as the knife of all trades.

Knife Safety Tips:
- Essential safety practices –Â Proper gripping, stabilizing techniques, and keeping knives sharp are all important aspects that should be considered when developing your skill set with knives. These will help your fingers intact when chopping and dicing.
- Set up a safe workspace – Be sure to remove the clutter around your cutting board and a very handy tip is to put a dish cloth under the board to stop it from slipping around when you are cutting.
Basic Knife Skills, The Technique
- Grip and Positioning: Knowing how to hold a knife correctly for stability and control will increase your cut accuracy and minimise waste. It will also result in cleaner cuts for better presentation. Grip the knife firmly with a pinch grip on the heel of the blade. Bending your fingertips under the knuckle, slide the blade along the knuckles. Never go above the knuckles because you may end up slicing your fingers.

- Keeping your knives sharp is essential if you want to be consistently good at cooking. You can sharpen them yourself or use a professional knife sharpening service. Even if you are good at keeping your knives sharp it is still suggested that you have them professionally sharpened to get the correct bevel angles back on the knife to give it a longer lifespan.
